Ordering Beef
Beef is commonly ordered as a side which is half of the hanging animal carcass. This will require approximately 12-15 cu.ft. of freezer space. This will typically supply a family of four with delicious, nutrient dense beef for 7-12 months.
Martinez Family Ranch markets spring calves and some grass-fed yearling steers for Fall delivery.
Sides of beef are priced yearly based on grass-fed beef market prices and on the processor’s “Hanging Weight” of each side. Hanging Weight is the carcass weight with all insides are removed from the beef.
Hanging weight of spring calf carcass sides typically ranges from 180lb to 215lbs per side. Hanging weight for yearling steers is typically in the 325lb to 350lb range. The cost to you is calculated as:
Hanging Weight X Grass-fed Market Price = Your Cost
Example: In 2024, Our price will be $8.00/lb on the hanging weight.
The cost of a 200lb side of beef would be: 200lb. X $8.00. =$1,600.00
Your beef will be custom cut according to your specifications:
Thickness of steaks (1”, 1.5”, 2” are typical ), size of roasts (2lb or 3lb typically), Ribs, stew meat or additional ground beef are options. Your beef will be vacuum packed to provide you better quality and longer freezer storage.
Your finished weight will vary from the hanging weight based on your choice of custom cuts. There will typically be 10-15 percent loss due to trimmed fat and removed bone from the butchering process.
Delivery Details
We will notify you of the processing dates and coordinate pick-up of your beef with you based on the processors schedule and will typically provide at least 1 day notice. Delivery is an option based on distance at an additional cost.
For 2024: We will have 4 yearling sides available in early October and 14 spring calf sides available in late October, November, and Early December. Additional sides my be available if the planned processing facilities in Taos become available.
For 2024: The price for grass-fed sides of beef will be $8.00/lb on the hanging weight of the carcass.
Deposit Required to Reserve
Martinez Family Ranch requires a non-refundable deposit of $500.00 to reserve your beef. If we are unable to deliver your beef because of processor or cattle issues, we will of course refund your deposit.
How to Reserve/Pay:
Contact us via our form here. We will reach out to your for the $500 deposit and to fill out a cut sheet. We accept cash, PayPal, and checks (with valid ID). Balance to be paid prior to delivery of product.
